When buying or growing fresh herbs, I like to have a plan of how I am going to use them so that they don't go to waste. This week I bought fresh cilantro, and this is how I've been using it. I also had cheese, onion, chicken, lime, and BBQ sauce that needed to be used. I have no idea how much I used of each ingredient, because I don't measure (which can sometimes be a bad thing).
1. Pico de gallo: tomato, onion, fresh cilantro, jalapeno, and lime juice (I put this on Morningstar Spicy Black Bean Burgers with guacamole and pepper jack cheese).
2. Hawaiian pizza: crust (I used Pillsbury Artisan), BBQ sauce, pulled chicken, onion, diced pineapple, mozzarella cheese, topped with fresh cilantro
3. Avocado chicken salad: pulled chicken, avocado, onion, lime juice, pinch of salt, and fresh cilantro
